Veggie Poke

INGREDIENTS

4 cups cherry tomatoes, halved

1 orange bell pepper, diced

2 cups diced mango

1 cucumber, diced

handful pine nuts, toasted if desired

juice of 1 large lime

1/4 cup fresh parsley, minced

METHOD

Mix it all up and enjoy! The key to this dish is the quality of ingredients ; )

Serves 4 (or 1 hungry raw vegan).
